The prattling of a deprived hungry woman...

So it's no secret that I am trying to rid myself of the protective layer of fat that surrounds my now defunct (for all intents and purposes, anyway) baby maker. Craig and I have had an on again off again relationship with our gym membership the last few months and that fact alone has not helped me in my quest. We also pretty much fell off the healthy eating band wagon. We didn't give up on healthy eating entirely...we just haven't been doing it regularly. So, we recently recommitted (for the umpteenth time)and I have been scouring websites and books for new recipes. While Craig was grilling our chicken I threw together this little vegetable medley. It was so easy and extremely tasty! I sauteed 4 small zucchini and 2 shredded carrots with some minced onion and garlic in 2T of olive oil just until tender. However, this is what I am craving today.... (I got the recipe from Kim's blog. She has some yummy others, too.) Chocolate Chip Cookie Pie 1 unbaked 9-inch (4-cup volume) deep-dish pie shell* 2 large eggs 1/2 cup all-purpose flour 1/2 cup granulated sugar 1/2 cup packed brown sugar 3/4 cup (1 1/2 sticks) butter, softened 1 cup (6 ounces) semi-sweet chocolate morsels 1 cup chopped pecans Serve with ice cream (optional) Preheat oven 325 degrees F. Beat eggs in large mixer bowl on high until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts and spoon into pie shell. Bake for 55-60 minutes. Cool on wire rack. Serve warm. Recipe is from Nestle Classic Recipes printed in 2003 * If using a frozen pie shell, use deep dish style and thaw completely. Good luck with the diet thing. No really... cuz I couldn't give up that pie. The veggies do look good though, but no one here at my house would eat them but me.

OH I am constantly sharing that quest too! Trouble is I don't even have the babymaker anymore - it went bye bye when I was 29 (still have the ovaries though so I still had PMS for years). I have a zillion healthy and yummy recipes but then these sweet people show me pictures of choc chips and I loose my resolve! LOL It's great you can work on it together. MY DH Lkes being a cuddly bear and sees no need to change - UGH! LOL Have a great weekend and good luck!

Yeah, sorry about that! It sure was yummy but you only have to have a little piece to enjoy it although you do have to have a little ice cream to go with it. Dang it!

You may want to go with the little less fattening dessert of Strawberry trifle and substitute angel food cake for the white cake. Hope that helps a bit! I gave up a long time ago (not really) but, I am doing water aerobics 3 times a week.

I hate having to worry about all that kind of stuff but we have to, don't we?

I have a similar squash/zuchinni medley that I make, too. It is soooo very good.

I have also made a yummy pie very similar to that, except it calls for milk chocolate and peanut butter chips. Oh my! I usually make it and freeze slices so I don't gobble it all up at once. (Plus, it's too sweet to eat at once.)

Both recipes look wonderful! I'm going to try the zuccini one.
I constantly struggle too, I think we all do, thank goodness I don't like to cook or bake or I'd be as big as a house:)

Hello :O) Wow the chocolate chip pie looks sooo good right now!!
We have a membership at our local rec, it's more to do the boys physical education for our school curriculm and I don't like going alone so I have the wii fit for home and have gotten off schedule since Wyatt's last MRI, once I restart I can just imagine the little chartoon trainer telling me how unsteady I am and 'you're dropping your arm' it's worse then going to a gym just because the computer chip lets you know your form is wrong-it's sort of weird when you think about it!!
Have you decided on an etsy shop? I wanted to do it too but for me I just don't have the time with school fast approaching, my husband was all for it though with his comment being "what do you really have to loose by trying it out?". Seems like such a good way to start out, low cost and the length of time you can leave something listed and look at all the people that view your blog that would be customers right off-word of mouth is the best advertisement :O)

I am so glad that zucchini is in season! I just picked our first yesterday. I think I'd rather have that pie though...yummers!!!

Those veggies look really good, almost as good as the chocolate dessert. Why does exercising have to be such a pain? I've been doing curves for like 6 months now, At first I did great, now I weigh 3 lbs more than when I started. I love your family picture by the way, I would love to have 5 kids, I guess well see how four goes first :)
